MIXED-STYLE HOT-FRY
"Hot-fry" (热炒 rè-chǎo), also known as "Stir-fry" (煮炒 zhǔ-chǎo), is a style of cooking where the ingredients are stir-fried over high heat in a wok. This method of cooking is used to create dishes that are crispy on the outside and tender on the inside. The dishes are usually served family-style, with everyone sharing the same dishes.
"Quick-fry" (快炒 kuài-chǎo), also known as "Small-fry" (小炒 xiǎo-chǎo) , is a similar style of cooking, but the ingredients are cooked at a lower temperature and for a shorter period of time. This method of cooking is used to create dishes that are lighter and healthier than "hot-fry" dishes. The dishes are also usually served family-style.
